Apricot Basil and Goat Cheese Stuffed Chicken



Serves 4



  • Olive oil spray
  • 4 skinless chicken breasts (about 1¼ lb total)
  • 10 large basil leaves, shredded
  • 4 dried apricots, finely chopped
  • 2 ounces goat cheese
  • 1/8 teaspoon salt (plus additional)
  • 1/8 teaspoon black pepper (plus additional)

How to:

  1. Preheat oven to 400°F and line a baking sheet with foil. Coat foil with olive oil spray and set aside. 
  2. In a medium bowl, combine basil, apricots, goat cheese, and 1/8 teaspoon each salt and pepper. 
  3. Place chicken on a cutting board and use a paring knife to slice a pocket into the side of each chicken breast to hold the filling. Enlarge the pocket carefully without cutting all the way through. Divide filling between pieces of chicken.
  4. Season outside of chicken lightly with additional salt and pepper. Place on prepared sheet and cover with foil. Bake for 30 minutes, then remove foil and broil for 3 minutes to brown surface.
